Cheesy, kid-friendly quiche from Dr Greene’s kitchen is a great way to bring more milk with DHA into your family’s diet. Prepare these the night before for an easy, nourishing breakfast.

1-3/4 cup Horizon Organic Whole Milk plus DHA
4 whole eggs
2 egg whites
1/2 teaspoon salt
1/4 teaspoon fresh black pepper
1 or 2 dashes cayenne pepper
2 slices sandwich bread, toasted and chopped into small cubes
1/4 cup shredded Horizon Organic mozzarella cheese
2 tablespoons minced fresh herbs such as chives, dill or basil
Preheat oven to 375 degrees
Whisk milk, eggs, egg whites, salt, pepper and cayenne until thoroughly combined.
Lightly oil a muffin pan. Chop toast into cubes and divide evenly among the muffin cups. Pour egg mixture into the cups, filling each 3/4 full. Sprinkle with cheese and herbs.* Cover with foil and bake in preheated oven for 10 minutes. Remove foil and continue to bake an additional 10 minutes or until a toothpick inserted in the middle comes out with just a few crumbs. Mini quiches will be puffy at first, then deflate as they cool. Serve warm or at room temperature.
*Recipe can be prepared to this point, covered with foil and refrigerated overnight, then cooked fresh in the morning.
