The basis for this flavorful, creamy dip is Dr Greene’s fresh ricotta made with Horizon Organic Milk plus DHA (see separate recipe).
2 cups fresh ricotta (see separate recipe) OR one 15-oz carton lowfat ricotta
1/3 cup reduced fat Horizon Organic Milk plus DHA, or more if needed
2 tablespoons flax oil*
1 clove garlic, minced, or 1/2-teaspoon garlic powder
3 tablespoons chopped fresh parsley
2 tablespoons chopped fresh chives
1 tablespoon fresh thyme, dill, tarragon, savory, chervil or a combination
salt and freshly ground pepper
*Find flax oil in the natural section of your grocery store.
Process ricotta, milk, flax oil and garlic in a food processor until the mixture is smooth and creamy. Add more milk by tablespoons if needed to achieve the desired consistency. Transfer to a bowl and stir in fresh herbs. Season with salt and pepper to taste. Chill at least an hour before serving.
