1 cup lager-style beer (or vegetable or chicken broth)
2 cloves garlic, quartered
2 (6-ounce) packages Horizon Organic shredded Cheddar cheese
1 tablespoon flour
2 teaspoons Dijon mustard
Dash of cayenne pepper, to taste
Things to dunk
Steamed broccoli, cauliflower or new potatoes
Sourdough or dark rye bread, cubed
In a saucepan or fondue pot heat beer and garlic over medium heat until mixture bubbles. Turn down heat and simmer for 5 minutes. Meanwhile, toss together shredded cheese and flour in a medium bowl.
Remove garlic from beer or broth with a slotted spoon and discard. Increase heat back to medium and slowly add cheese, stirring until all cheese has melted and mixture is smooth, about 5 minutes. Stir in mustard and cayenne. Turn down heat to low and serve.
