Even kids who don’t like broccoli will like this cheesy treat.
2 tablespoons Horizon Organic butter
1/2 medium onion, diced
2 cups fresh or frozen broccoli florets, chopped small
2 tablespoons flour
3 cups low sodium chicken broth
1 teaspoon Dijon mustard
1 cup Horizon Organic half & half
1 1/2 cups Horizon Organic shredded cheddar cheese
Salt and freshly ground pepper, to taste
Freshly chopped parsley, for garnish
In a large pot, melt butter over medium heat. Add the onion and sauté about 5 minutes, until soft. Add broccoli and cook 2-3 more minutes. Lower heat, add flour, and cook, stirring, 3-4 minutes, without browning. Add chicken broth and mustard and raise heat to bring to boil. Lower heat and simmer about 5 minutes. Add half & half. Bring to simmering point and simmer another 5 minutes. Add shredded cheese and stir until melted. Add salt and pepper to taste. Ladle into serving bowls and garnish with chopped parsley, if desired.
