Baked Cheese Omelet

Ingredients

5 large Horizon Organic eggs
2 tablespoons Horizon Organic half & half
3/4 cup Horizon Organic cottage cheese (regular or lowfat)
1/2 cup Horizon Organic shredded Cheddar cheese

Directions

Preheat oven to 450° and spray or butter an 8-by-8 baking dish. In a medium bowl, thoroughly whisk together eggs, half & half and cottage cheese together. Pour mixture into the prepared baking pan. Sprinkle cheddar cheese over the mixture. Bake for about 20 minutes until the top is lightly browned.
