Organically Delicious
July 13, 2011

We know the new year is well underway, but we’re not quite ready to give up on the holidays yet. Our first-ever Horizon Organic holiday recipe book featuring favorite family recipes from Horizon farmers and staff, and the Horizon Organic Test Kitchen, is still available for download! The free cookbook, which includes recipes for Crow Nest Pudding, Peanut Butter Fudge, Sour Cream Apricot Cake and Potato Stuffing, among others, is at http://issuu.com/hoholidayrecipes/docs/horizon_organic_holiday_recipes?viewMode=magazine.

And speaking of recipes, Horizon Organic producer partner Perry Clutts sent us two amazing homemade pecan pies for the holidays. Made with organic ingredients using a 1946 recipe from Joy of Cooking (recipe below), the pies were deeelicious.

Here’s the recipe: Prepare 1 baked pie shell. Cream: 1/3 cup Horizon Organic butter and 3/4 cup packed brown sugar. Beat in one at a time: 3 organic eggs. Stir in: 1 cup Wholesome Sweeteners organic corn syrup, 1 cup broken pecans, 1 tsp organic vanilla and 1/4 tsp salt. Fill the shell. Bake at 375 degrees for 1/2 hour.
